Focaccia Recipe 250g bread flour 50g 00 flour Focaccia 

Recipe

250g bread flour
50g 00 flour 
225g water
75g levain
6g salt

Mix flour and water, leave to rest for 45 min.
Add levain and salt, mix until no more salt is seen, rest for 1 hour.
4 x coil and fold, every 30 min.
Proor for 1 hour at 26°C.
Cold fermentation in the fridge.
Next day, place a parchment paper into a baking dish and pour some olive oil on the parchment paper.
Place the dough, slowly stretch the edges.
Leave to proof until double (2-3 hours at 26°C) 
Pour olive oil on top and dimple with your fingers. Put some salt.
Any topping you desire, optional.
Bake at 220°C for 30 min.

Banana triffle 🍌 1/2 can of condensed milk 1 Banana triffle 🍌 

1/2 can of condensed milk
1 Vanilla Instant Pudding (Jello)
480 ml of cold milk
2 cups of heavy cream 
1 tbsp granulated sugar 
Crumbled cookies or whole
4 medium bananas 

Method

Whisk together the milk with the condensed milk. Add in the instant pudding, beat until no lumps are seen. 
Transfer to a baking dish, cover and refrigerate. 
Use the whisk attachment of the stand mixer to whip the heavy cream with the sugar until stiff peaks form.
On low speed add the pudding mixture. You should have a smooth pudding mixture.
To assemble: start to layer the pudding, crumbled or whole cookies and sliced bananas. Repeat the layers.
On the top sprinkle with crumbled cookies and decorate with some left sliced bananas and peanuts (optional).
Refrigerate for at least 4 hours.
