Banana cake topped with banana slices
Ingredients
- 3 ripe bananas + 1 for the top of the cake
- Lemon juice
- 1/2 cup of butter (+/- 100 g)
- 2 eggs
- 80 g of demerara sugar
- Pinch of salt
- 140 g of flour for cakes
- 1 teaspoon of baking powder
Instructions
Preheat the oven to 200ºC.
Grease a 22 cm pan with butter or oil for molds and flour the pan (not too much flour).
Melt the butter.
Crush the 3 bananas, add a little lemon juice to avoid the bananas getting dark.
Mix the eggs with the sugar and mix well with the hand whisk, add the pinch of salt.
Sift the flour and baking powder. Pour into the egg mixture. Mix well.
Pour the previously melted butter.
Add the crushed bananas and mix.
Pour the batter into the pan and place the banana slices on the top.
Place the pan in the oven for about 20 min. After 20 min, check if the cake is cooked with a cake stick or a normal toothpick.
When the cake is ready, with a knife or spatula try to peel the cake out of the pan and let it cool inside the pan or on a cooling rack.
