The dought to make the filled doughnuts is the same for the classic donuts.


  • 3 cups flour
  • 50 g sugar
  • 2 tsp instant yeast
  • 1/2 tsp of salt
  • 1/4 tsp nutmeg (optional)
  • 1 egg
  • 1 cup milk
  • 2 tbsp butter, melted
  • 1/2 tsp vanilla essence
  • Vegetable oil for frying




In a bowl of a stand mixer pour the dry ingredients and mix with the dough hook. In another bowl, mix the egg, milk, and melted butter with the vanilla. Add the wet mixture to the dry mixture. Knead the dough for about 10 minutes, until soft and smooth. Try to stretch a little piece of the dough and check if it rips.


Place the dough in a greased bowl, cover, and let it rise for 1 to 2 hours until it doubles.



Place the dough on a floured surface. Roll out the dough without leaving very thin, at least 1 cm, with a circle cutter or a donut cutter, cut out the circles of dough. After cutting, cover with greased plastic wrap, as not to stick to the dough, and let the donuts rise for 30 minutes to 1 hour.



In a Dutch oven or pan, heat the oil. Be careful, the oil must not be too hot because otherwise the donuts will not cook properly and may burn and if the oil is cold, the donuts will be soaked by the oil.


Put only 2 to 4 donuts at a time, until they are brown/golden, depends on your pan size. Each side takes 3 minutes to be well fried.


Remove the fried donuts with a slotted spoon and place them on top of a cooling rack or absorbent paper.


You can fill the donuts, cover with sugar mixed with cinnamon or cover with icing, your choice.


One good thing to check if the oil is on point is, to check small bubbles on the surface.
